PRIMAVERA

Concentrated powder mix for bread with durum wheat, oat, spelt, sunflower and sesame.
• High in fibres and proteins
• With sour dough
• Each bag contains 4×100 g packets of Primavera topping to garnish

HOW TO USE

  • PRIMAVERA 5,000 Kg
  • Flour 00  5,000 Kg
  • Water  5,000 Kg
  • Yeast 0,400 Kg

METHOD

Knead with a spiral mixer for 4 min at low speed and 8 min at high speed. The dough must be uniform and at a temperature no greater than 25°C;
Shape into 3.3 kg pieces
Round off and let rest for 20 min., covered;
Make 110g pieces, round them off and let rest, covered, for 15 minutes on the floured work surface.
Press and impress with the “Primavera” stencil;
Let rise for 50 min. covered with a cloth;
Brush with water and sprinkle with the seeds from the bag;
Bake 3 minutes at 230°C with steam and the valve closed
