HOW TO USE

  • VEGA MINI CEREALI  2,000 Kg
  • Flour   10,000 Kg
  • Water  6,100 Kg
  • Yeast 0,350 Kg
  • Salt 0,250 Kg

METHOD

Knead for 3 minutes at first speed and for 8 minutes at second one (spiral kneader)
Let the dough rest for 30 minutes (covered with cloth)
Portion into 400g pieces
Leave to rise for 70 minutes on a stretcher in the cell
Before baking, carve the loaves
Bake with steam at valve closed at 230°C for 30 minutes
