HOW TO USE
- GRAN SOIA 5,000 Kg
- Water 5,000Kg
- Flour 5,000 Kg
- Water 1,250 Kg
- Yeast 0,300 Kg
METHOD
Let soak for at least one hour up to a maximum of 12 hours
Knead normally
First dough rest 20 minutes
Break into 600 g pieces
Second dough rest 30 minutes
Shape loaves, about 25 cm
Let rise for 60 minutes
Sprinkle with flour and make slits
Bake at 230°C for 50 minutes
