HOW TO USE

HAND PROCESSING

  • PIZZA CRACKER  10,000 Kg
  • Water* 5,400 Kg
  • Lard or Olive oil 0,800 Kg
  • Yeast  0,100 Kg

*When working with the dough sheeter, a harder dough is required, it is sufficient to use 4,000Kg of water.
**The type of fat used impacts the crispiness of the finished product

METHOD

Knead normally;
Shape into 700 g pieces for 40×60 trays;
Let rest for 40 min;
Smooth;
Make holes with a dough docker;
Brush with olive oil and sprinkle with salt;
Cut in pieces the desired size;
Let rise for 40 minutes.;
Bake at 230°C for 25 minutes
