Soft Fruit Sponge Cakes

SemiMou is a neutral base for preparing mousses and semifreddi (soft-frozen desserts and ice- creams) in any number of flavours.
It is easily whisked, even using a simple electric whisk, and accepts every kind of added ingredient.
The formulation has been conceived to guarantee maximum convenience of management: Soft-frozen desserts can be served straight from the freezer and they keep their firmness long before starting to melt.


SEMIMOU 1.000 g
Fresh or pureed soft fruits 300 g *
Lemon juice 12 g (2 tablespoons)

*for soft frozen desserts, up to 400 g of soft fruit + 40 g of alcohol

DEFROSTING the PIPING BAG

The piping bag can easily be thawed by using one of the following methods.
1) 24 hours in refrigerator
2) 40 minutes at room temperature
3) 10-15 minutes in lukewarm water

PREPARATION

Once the piping bag has thawed, finely chop the soft fruit together with the lemon juice.
Whisk the SemiMou for 2-3 minutes in a crown-wheel whisk (or with an electric whisk)
Add the soft-fruit mixture and whisk for a further 2-3 minutes until a homogenous compound is obtained.
Pour into suitable containers.
Mousse: Chill in refrigerator at 0-5 C°
Soft-frozen desserts: Freeze at -20°C.
