Ingredients

Margherita Cake
1,000 kg
Whole Eggs
0,250 kg
Whole Hazelnuts
0,300 - 0,400 kg

1 Put the mix in a planetary machine and knead with eggs and cocoa at low speed until the dough is homogeneous
2 Then add nuts, shape the dough into stripes with a 3/4cm diameter and put them on a baking sheet
3 Brush the surface with eggs and bake at 200°C for about 15-20 minutes
4 While the stripes are still warm, cut them in the cantuccio shape
5 Place again the cantucci in the oven at 200°C for about 10 minutes to toast them
