SPRAY MALT

Malt extract with high diastatic power, dehydrated in spraitization tower and then supported on malt flour. At the beginning the spray malt’s enzymatic deactivation is much slower than standard malts.
Suggested for all types of leavened dough, both in direct fermentation that in the sourdough ones.
Spay malt gives excellent results used in butter-leavened dough because it fights the negative effect that lactic acid has on the action of yeast.

HOW TO USE

The Spray Malt percentage varies depending on the product in which it is used. A good comparison for traditional malt extracts is as follows:
– 50% less than standard extracts
– 60% less than high diastase power extracts
In multiple kneading processes, include the product in the last dough.
