- Water 5,500Kg
- Yeast 0,300 Kg
METHOD
Knead normally
Let the dough rest for 30 minutes
Break and form into loaves about 600 g each and 25 cm
Let rise for 60 minutes
Sprinkle with flour and make slits
Bake at 230°C for 45 minutes with steam
